I miss cooking. I mean, I really miss it. That’s the thing I really miss about having my own house. So I decided to start sharing some recipes that I absolutely love with you. Some are my own, and some aren’t.
You’ll probably find a lot of soup recipes here as well as a lot of comfort food recipes. If this sounds like you, stay tuned!
This first recipe is a tex-mex taco salad recipe I found on. I changed it a bit to fit my preferences but it still turned out to be great so I figured I’d share it with you. It’s been my summer go-to.
Tex-Mex Taco Salad
1 Cup Dressing Ranch
1 Squeeze Lime Juice
2 Tablespoons Taco Seasoning
1 Pound Ground Beef (Or Beyond Meat)
1 Tablespoon Taco Seasoning
1/2 Cup Water
1 Chopped Head Of Romaine Lettuce
1 Can Beans Black (Drained)
2 Diced Bell Peppers
1 Diced Jalapeno
1 Diced Red Onion Red
1 Cup Of Corn Roasted
1 Cup Of Cubed Cheese (Monterey Jack or Pepperjack)
2 Cups Of Red Tortilla Strips
Using a blender, take your ranch, lime juice, and seasoning and blend it all together until it’s fully mixed. You will have a smooth dressing when it’s finished. Once it’s done you can put it in the fridge until you’re ready for it.
Heat a skillet over medium heat and then add your ground beef (or beyond meat) and cook until brown. This should only take about 8 minutes. When it’s finished drain all of your grease. Then you can add in your taco seasoning and water and allow to simmer for a few minutes. After that remove from heat and set aside.
Pull out your favorite bowl and add in all of your ingredients including your beef and tortilla strips. Then drizzle your dressing on top and enjoy!
